Título: Austeridade e epifania: a cultura da autenticidade dos cozinheiros contemporâneos Autor(es): Liberal, Fabio Guimaraes Orientador: Brito, Simone Magalhães Abstract: The purpose of this study was to show how a culture of authenticity among cooks and chefs was constituted, and its particularities in terms of symbolic representation and moral references. We argue that the world of gastronomy has become a paradigmatic environment for the investigation of authenticity as it produces a seminal dialectical relationship between expressivism (inspiration, creation and freedom) and military-inspired austerity (heavy physical labor, long hours standing, hierarchical brigade regime, often unhealthy environment). Thus, we seek to understand the meanings attributed by gastronomy students and professionals regarding the expression of the uniqueness of the subjects. We paid attention to the strategies used to differentiate authenticity and inauthenticity, so that it was possible to grasp the social effects of this distinction that marks the condition of the contemporary cook. Qualitative research was the method used. It was based on interviews with students and professionals, as well as participant observation at gastronomic events and at two restaurants located in Recife. From this fieldwork, we observe that the quest for authenticity establishes a promise to escape the austerity of the kitchen, while, at the same time, generates an overload of the self, since “it” is called to project “its” style in all life details. This burden often produces a symptomatic picture of social unrest (anxiety, depression, burnout), which is covered by the process of consecration and mystification of the aesthetic itself. Título: O trabalho precário como condição: as trajetórias ocupacionais de famílias de trabalhadores no Vale do Mamanguape Autor(es): Donato, Eduardo Orientador: Oliveira, Roberto Véras de Abstract: Precarious work is a condition that has been historically present in the occupational trajectories of most of the individuals that belong the country's working class since the time of Colonial Brazil. Advances in labor legislation from the 1930s onwards and the great mobilizations of trade union organizations from the 1960s onwards, however, do not seem to have been enough to transform this reality. Although the conquest of rights and the increase in formalization is undeniable, the improvement in working conditions has not reached all regions of the country and not all sectors of the economy, leaving Brazil still far from claiming the supposed state of social welfare announced by other nations of the world. Opposite to that, what we observe in the country is that in recent years, following a worldwide trend, precarious work has expanded, reaching more sectors and diversifying its forms of manifestation, with the establishment of new labor relations that ascend with the neoliberal phase. of capitalism. Understand the reproduction and growth of precarious work in the Vale do Mamanguape over time, as well as documenting its different contours and the impact of these labor realities on the occupational trajectories of workers and their families (in their objective and subjective dimensions) is the main interest of this researcher, in tune with other recent formulations of the Sociology of Work. We also intend to analyze how the public authoritys and the main sectors of the regional economy relate to precariousness, pointing out that the appropriation and/or stimulation of non-regular forms of work are now part of the system of both. Título: Aspectos morais por trás da "carne quente" : uma questão de gosto e (in) civilidade Autor(es): Liberal, Fabio Guimarães Orientador: Brito, Simone Magalhães Abstract: This work analyzes the relationship between civility and morality when related to the issue of meat consumption and slaughter of animals. To do so, we develop the research in an area where there is a remaining way of the slaughter practice. This place is Casa Amarela Market, located in the northern suburb of Recife, and its close open air market where live poultry are sold, many of them to be killed in a service of slaughter offered nearby. In this context, attended by a very heterogeneous public, we noticed a strong appreciation of fresh meat, "hot meat", as opposed to meat processed industrially. We try to analyze this predisposition according to Norbert Elias' logic of internalization of civilizing forms. Thus, we turn to the sociological understanding of the circumstances in which the informants are entitled to keep practicing the craft slaughter, an activity that suffers more social pressure then before due to the growing concern for animal welfare. The interest here is to identify the reasons why, in the midst of amenities and advertising appeals designed by meat and slaughter industry, certain individuals prefer to remain close to the most critical stage of meat eating. As a result of this discussion, this article raises some reflections on the moral implications that the civilizing process and food modernity evoke, especially concerning the treatment of animals. Título: Territórios do trabalho informal: dinâmicas e desigualdades no comércio ambulante de João Pessoa-PB Autor(es): Silva, Mylena Serafim da Orientador: Rombaldi, Maurício Abstract: Informal work is not only a means of survival for millions of Brazilians today but also a determining factor in the territorial configurations of society. This intertwining between work and territory is understood here through street trade, popularly known as street vending. Focusing on the city of João Pessoa, in the state of Paraíba, this study aimed to analyze the different experiences of vulnerability among street vendors, comparing different territorial zones of the city. Three main zones of activity for these workers were identified: the city center, the coastal strip, and the areas surrounding major municipal events that occur periodically. The first two groups face the consequences of operating illegally according to local legislation, while the latter are the only ones recognized by the Municipal Code of Postures (1995) as a regular activity. All of them are exposed to the consequences of the lack of social protection at work, which is replaced by non-state arrangements aimed at mitigating various forms of social vulnerability. This research was carried out between 2021 and 2024, in the post-pandemic period. Methodological procedures included ethnography, interviews, and questionnaires designed to outline the profiles of these workers and their work practices in relation to the zones in which they operate.
