Abstract: The strawberry belongs to the family Rosaceae and the genus Fragaria, one inflorescence large commercial acceptance by their appearance, aroma and flavor attractive features such place as one of the tastiest desserts. The strawberry has highlighted as a good source of ascorbic acid and flavonoids compounds, but despite excellent sensory characteristics, the strawberry is very perishable, so that has limited shelf-life, due to the high respiration rate and susceptibility to the development of agents pathogens. Several factors can influence the physicochemical characteristics of an agricultural product, such as cultivar, soil type and climate, the year climate and production system, organic or conventional. Thus, the objective of this study was to evaluate the quality, the bioactive compounds, antioxidant activity and sensory quality of strawberries produced in organic and conventional systems. Cultivars Albion and Camino Real were derived from organic and conventional systems, while cultivating San Andreas was derived only from conventional culture. The fruits of strawberry were collected from different commercial plantations in the valley region Ipojuca mesoregion Agreste Pernambucano in the municipality of micro Brejo the Mother of God - EP, planted in two cropping systems (organic and conventional) and evaluated in the laboratory Post Harvest Biology and Technology Center of Agrarian Sciences, Federal University of Paraíba (CCA / UFPB). The experiment was conducted between December 2012 and January 2013. The strawberries were harvested at commercial maturity, selected for their maturity and absence of defects, pre-refrigerated and packed in plastic containers with a capacity of 250g. The fruits, previously selected, were divided and identified by farming and conventional tillage or organic. In strawberries grown in SC cv. San Andreas possessed higher values of weight, firmness, SS, PET, and AAT AA. In strawberries grown in SC and SO cv. Albion in SO possessed higher values of SS, diameter, external color, uniformity of color, brightness and purchase intent. Already cv. Camino Real was better in SC having higher values of diameter, length, fresh weight, brightness and AAT. Strawberry fruits produced in the Valley Ipojuca-PE have high content of phenolic compounds, especially those from the OS that had concentrations higher than 28% from the SC. In fruits of strawberry cvs. Albion, Camino Real and San Andreas, there are high antioxidant activity and are subject to the management system of the fruit. In SC, fruits cv. Albion have a more reddish than Camino Real and San Andreas. Fruits of cv. Albion were preferred in appearance and flavor in both cropping systems. Among cropping systems, fruits cv. Albion stood out for the quality aspects in organic and conventional in Camino Real. Other experiments, however, should be conducted to validate these findings in other strawberry crops in this region
