GASTRONOMIA PARAIBANA: o que narram os arquivos do Núcleo de Pesquisa e Documentação Popular (NUPPO) da Universidade Federal da Paraíba

Abstract

The present study aimed to investigate the socio-historical practices of gastronomy in Paraíba from the documentation that constitutes the historical archive of the Research and Documentation Center for Popular Culture (NUPPO) of the Federal University of Paraíba (UFPB). In order to do so, it adopted as a theoretical-methodological assumption the qualitative research of the documentary type, considering that it can develop its collection on documents called unpublished, that is, those that did not undergo interventions and were not even published. Characteristics Documentation contained in the NUPPO Historical Archive, locus of investigation of gastronomic practices recorded in Paraíba in the 70's and 80's. Theoretically, the investigation was anchored in studies on memory, identity, understanding the food practice in the ambit of the cultural dimension. The results showed that the records of food practices bring with them the ability to strengthen the cultural identity of the people of Paraíba, from a list of recipes collected orally and materialized in ethnographic records.
